Yuca

Fresh from the property

This is the same tuber that tapioca comes from.

You chop the ends off, make a lengthwise slit through the skin, and take the skin off in (hopefully) one piece.


Dice into approx 1" cubes.

Boil for about 10 minutes, or until soft, yet firm (as you would a potato).

Most people then pan fry or deep fry them.  They taste very similar to a potato, so you can serve them in the same way.  Yum yum.
